coconuts are in great abundance on pohnpei. there are so many kinds too. i've never had a big taste for coconut things...but i enjoyed every

 single coconut thing we had. sister peters taught us how to sit on this little seat and grate coconut. it really takes skill and finesse.

when we visited the mand branch they taught us how to husk, split, and slice coconuts. the juice, the meat part, 

the grated meat... it's all delicious. they use it all in 101 ways.  yum!
