WINNERS (i will make these dishes again):
vegetable lasagna, creamy tortellini, crusted quiche, bean mexi soup, pinto bean burritos, extreme veggie stirfry, squash casserole, italian soup, black bean burritos, fettuccine and homemade alfredo sauce, kale soup, lentils meatless meatloaf, curried squash risotto, bowtie pasta and basil creme sauce, tofu stroganoff, homemade four cheese macaroni, zucchini casserolePRETTY GOOD, but probably won't make the repeat list:
FAIL:
korean bean sprout saladlentils meatless meatloaf
i tried to keep our protein in with beans, nuts, soy. we had lots of yummy vegetable sides: almond green beans, sweet potato fries, veggies of all kinds (baked squash, steamed carrots, broccoli, cauliflower), peas, corn on the cob, spinach salads, asparagus, brussel sprouts.
we only had cheat/cop out food a few times: pancakes, ramen, pizza, peanut butter and honey.
it was funny, on june 1st just by second nature i made a vegetarian meal. there are about 4 meals i didn't get to, so i'll try those sometime. alas, i crave a good burger like the next american... so i don't think we're vegetarians for life, but we will be eating much less meat meals around here. it was a fun experiment. if any of those recipes sound appealing to you, let me know and i'd love to pass them on!!!

Hello darling! I would love any/all of your keeper recipes. (They sound exciting!) My e-mail is my first and last name, no spaces, at yahoo dot com.
Thanks!!
I was actually going to ask you about this. So... I'm pretty much vegetarian, I grew up around a veg sister. And I always felt bad for Pierce because I never used a ton of meat in our dinners. I've been trying to be better, but just recently Pierce asked if we could not have meat in any of our dinners. And I immediately thought of you! Where did you go to find your favorite veggie recipes? I want to see some of your favorites - I'll have to make a list of the recipes I want. :) That's awesome. I'm sure we'll be joining you soon!
Count me in on the wanting of your recipes. My sister is vegetarian and I LOVE eating with her. I think if I weren't so lazy I would switch over completely too. I would love any or all recipes emailed to me. Send them to me through facebook!! Thanks. PS. You are gorgeous as always!! I love following your blog and see your cute family!
good job! i can't believe how much variety you got in there! rob and i are mostly just lazy so we don't cook with a lot of meat, until summertime when we grill everything we eat :)
You should post your favorite recipes! I would love the ideas. I'm trying to do at least half our week vegetarian. We'll see how it goes . . .
Impressive! You guys are so fun--and I'm definitely going to need some of those recipes :) Miss you!
How fun! I would love some of your recipes Mari! The creamy tortellini, Curry Risotto, quiche, etc. all sound so delicious!
wow! I think that would be so hard, nice job! Definitely save some money not having to buy meat! I'll have to try some of those meals sometime.
I am so impressed, that is awesome!!!
I'm not a vegetarian, however, my son is. My favorite meal that I prepare for him is steamed veggies...(zucchini, carrots, onion, broccoli)...over your favorite pasta...then Parmesan cheese! Fast...easy...delish!!
